USE OF SELECTIVE PLANT FIBRES IN MUST

THE GENERAL ASSEMBLY,

IN VIEW OF Article 2, paragraph 2 b) ii of the Agreement of 3 April 2001 establishing the International Organisation of Vine and Wine,

CONSIDERING the work of the “Technology” Expert Group,

CONSIDERING Resolution OIV-OENO 582-2017 adopted in 2017 on the use of plant fibres in wines,

DECIDES to widen the scope of application to musts and, at the proposal of Commission II “Oenology”, to introduce the following oenological practice into part II, Chapter 2, “Musts”, of the International Code of Oenological Practices:

PART II

2. Musts

TITLE:USE OF SELECTIVE PLANT FIBRES IN MUST

Definition:

Use in musts of a selective absorbent composed of plant fibres.

Objectives:

1. To reduce the ochratoxin A levels in musts;
2.  to reduce the number and levels of phytosanitary product residues in musts.

Prescriptions:

1. Selective plant fibres are to be incorporated into must, or during fermentation;
2. the dose to be used is to be determined depending on the must and levels of molecules to be adsorbed, and should not exceed 200 g/hL;
3. selective plant fibres are to be removed by racking after sedimentation, by centrifugation or by filtration;
4. selective plant fibres are to be used in musts in compliance with the applicable authorisations and limits for phytosanitary product residues
5. selective plant fibres should comply with the prescriptions of the International Oenological Codex.
