USE OF SELECTIVE PLANT FIBRES IN WINE – update to Resolution OIV-OENO 582-2017

THE GENERAL ASSEMBLY,
IN VIEW OF Article 2, paragraph 2 b) ii of the Agreement of 3 April 2001 establishing the International Organisation of Vine and Wine,
CONSIDERING the work of the “Technology” Expert Group,
CONSIDERING Resolution OIV-OENO 582-2017 adopted in 2017,
DECIDES, at the proposal of Commission II “Oenology”, to modify file II.3.4.20 in part II, chapter 3, “Wines”, of the International Code of Oenological Practices of the OIV as follows:

TITLE: USE OF SELECTIVE PLANT FIBRES IN WINE
Definition:
Use in wines of a selective adsorbent composed of plant fibres.
Objectives:
- To reduce the ochratoxin A levels in wines;
- to reduce the number and levels of phytosanitary product residues in wines.
Prescriptions:
- Selective plant fibres are to be used as processing aids and incorporated either into wine or during filtration with continuous deposition, during cross-flow filtration, or as a constituent of a filter sheet;
- the recommended dosage is to be determined according to the filtration technique used, without exceeding 1.5 kg/m2 of the filter sheet surface area or 200 g/hL in wine;
- selective plant fibres used in wines are to be removed by racking after sedimentation, centrifugation, or filtration;
- selective plant fibres are to be used in wines in compliance with the regulatory requirements, particularly the permitted limits for phytosanitary product residues;
- selective plant fibres should comply with the prescriptions of the International Oenological Codex.
