RESOLUTION OENO 9/2001
USAGE OF PIECES OF OAK WOOD IN WINEMAKING
THE GENERAL ASSEMBLY,
HAVING CONSIDERED the work of the expert group "International Code on Oenological Practices,"
DECIDES based on the proposal by Commission II "Oenology" to include the following oenological practices and Prescriptions in Part II of the aforementioned International Code:

Chapter 3: Wines
Usage of pieces of oak wood in winemaking
Definition:
Usage of pieces of oak wood in winemaking.
Objective:
To introduce the characteristics of certain oak wood constituents into wine.
Prescriptions:
- The pieces of wood (from Quercus species) will have to be of an appropriate size.
- The pieces of oak wood may be grilled or burnt but not charred, including on the surface.
- The quantity of pieces of oak wood to be used in the wine is at the discretion of the winemaker.
- The pieces of oak wood shall comply with the prescriptions of the International Oenological Codex.
Recommendation of OIV:
Accepted.
Declaration of the General Assembly:
The General Assembly requests that at the very latest by the meeting:
The International Oenological Codex sheet realting to prescriptions for oak wood pieces be established.
That Commission III “Vitiviniculture Economy” be able to propose consumer information means for the wines involved.
