TARTRATE STABILISATION BY TREATMENT WITH CATION EXCHANGERS – MODIFICATION OF THE FILE

THE GENERAL ASSEMBLY,

In view of article 2, paragraph 2 ii of the Agreement of 3 April 2001 establishing The International Organisation of Vine and Wine,

CONSIDERING the work carried out by the "Technology" experts group,

CONSIDERING the file 3.3.3. (OENO 1/93) related to the tartaric stabilisation by treatment with cation exchangers published in the Part II of the "International Code of Oenological Practices"

DECIDES, on the proposal of the Commission II "Oenology", to modify the file 3.3.3. as follows Under Prescription a): under the first bullet point replace "will" by "may be"

The prescription a) should read as follow:

Prescriptions :

  1. The treatment must be limited to the elimination of excess cations.
  • The wine may be initially cold treated.
  • Only the minimum fraction of a wine necessary for obtaining stability will be treated with cation exchangers.
