CARBON TREATMENT

THE GENERAL ASSEMBLY,

HAVING CONSIDERED the work of the expert group "International Code on Oenological Practices,"

DECIDES:

BASED ON THE PROPOSAL BY Commission II "Oenology" to modify sheet 2.19 “Carbon Treatment” of the “International Code of Oenological Practices” as follows:

Chapter 2: Musts

2.19 Carbon treatment

The “definition» becomes:

  • Addition of carbon to must.

Objectives:

  1. To correct organoleptic characteristics of wine coming from musts affected by fungi such as grey rot or oidium;
  2. To eliminate possible contaminants;
  3. To correct the colour :
  • white musts derived from the white juice of red grapes,
  • very yellow musts derived from white grape varieties,
  • oxidized musts.
