RESOLUTION OENO 10/2004

PARTIAL DEALCOHOLISATION OF WINE

THE GENERAL ASSEMBLY,

CONSIDERING Article 2 paragraph 2 ii of the agreement establishing the International organisation of vine and wine

CONSIDERING the works of the experts group International Code of Oenological Practices,

DECIDES:

Upon the proposal by Commission II "Oenology" to introduce in the International Code of oenological practices the following oenological practices and prescriptions:

Chapter 3: Wines

Partial dealcoholisation of wine

Definition:

Process to reduce the ethanol content of wine.

Objective:

To obtain partially dealcoholised wine.

Prescription:

  1. The objective can be achieved by methods known as subtractive depletion techniques.

    1. This process must not be used on wines with any organoleptic defects.
    2. The elimination of alcohol in wine must not be done in conjunction with the modification of the sugar content in the corresponding musts.
    3. This technique is not to be used in conjunction with other depletion techniques.
    4. The alcoholic strength must not reduced by more than 2% alc. vol.
    5. The process shall be placed under the responsibility of an oenologist or specialised technician.

Recommendation of OIV:

Admitted subject to the description of techniques listed above.
