MUSTS – TREATMENT WITH CASEIN
THE GENERAL ASSEMBLY
IN VIEW of Article 2 paragraph iv of the Agreement of 3 April 2001 establishing the International Organisation of Vine and Wine
CONSIDERING the opinion of the « Wine Technology » experts group,
DECIDES on the proposal of the Commission II "Oenology", to introduce in the following practices and treatments in the International Code of Oenological Practices:

Chapter 2: Musts
Treatment with caseine
Definition:
Addition of casein to musts in the form of a colloidal suspension or in association with other fining products.
Objective:
Elimination of polyphenolic compounds or those susceptible to oxidation
Prescription:
The casein used must comply with the prescriptions of the International Oenological Codex.
Recommendation of the O.I.V.
Admitted
