MODIFICATION OF MONOGRAPH ON PIECES OF OAK WOOD (OENO 03/2005)

The General Assembly considering Article 2, paragraph iii of the Agreement of 3 April 2001 establishing the International Organisation of Vine and Wine,

Upon proposal of the group of experts “Technology” and the group of experts “Specifications of oenological products”,

DECIDE to modify the existing monograph on Pieces of oak wood (OENO 03/2005) introducing the following paragraph (6. Introduction in wine) in the International Oenological Codex and to adapt the resolution thereof accordingly:

6. INTRODUCTION IN WINE

Where bags or other containers are used as the means of introducing pieces of oak wood or related support system into wine, they must be made from materials that are approved for food contact in the country of use, and which do not release any substances into the wine in concentrations which may be harmful to health, or jeopardise to the quality of the final product.
