RESOLUTION OENO 2/2004

COLD TREATMENT

THE GENERAL ASSEMBLY,

IN VIEW of Article 2 paragraph iv of the Agreement of 3 April 2001 establishing the International Organisation of Vine and Wine,

HAVING CONSIDERED the work of the International Code of Oenological Practices experts group,

BEARING in mind OENO 2/2001 related to the partial dehydratation of wine and Resolution OENO 3/2001 related to Cryoconcentration of wine adopted during the 81st General Assembly of the OIV in Adelaide (Australia);

DECIDES:

On the proposal of Commission II «Oenology» to modify the aforementioned International Code  of Oenological Practices, sheet 3.3.4 – Cold Treatment

PART III

Chapter 3: Wine

Sheet 3.3.4

Under the title

  • The indication "Cold Treatment" is replaced by "Cold stabilisation"

Under "Objectives"

  • Delete paragraph ”b”

Under "Prescriptions"

  • Delete the paragraph indicating:

For objective b) treatment is done by partial freezing of wine with the elimination of ice formed by physical means [See cryoconcentration (3.5.11.1.)].
