RESOLUTION OIV-OENO 555-2015

UPDATE TO THE MONOGRAPH ON CASEIN

The General Assembly,

IN VIEW OF Article 2, paragraph 2 iv of the Agreement of 3 April 2001 establishing the International Organisation of Vine and Wine,

CONSIDERING the work of the "Specifications of Oenological Products" Expert Group,

DECIDES, at the proposal of Commission II "Oenology", to modify the undermentioned points of monograph COEI-1-CASEIN in the International Oenological Codex as follows:

  • 3. Characteristics

The level of potassium carbonate and/or potassium hydrogen carbonate in the mixture of soluble caseins is to be reduced to 20% (instead of 25%).

  • 5.4 Ashes

The level of ashes should be less than 3% for acid casein and less than 23% (instead of 11%) for the acid casein and potassium carbonate or potassium hydrogen carbonate mixture.
