TREATMENT BY DIMETHYL DICARBONATE - MODIFICATION OF SHEET

THE GENERAL ASSEMBLY,

CONSIDERING Article 2 paragraph 2 ii of the Agreement establishing the International Organisation of Vine and Wine

Taking note of the works of the “Technology“ expert group,

CONSIDERING resolution Oeno 5/2001 related to the treatment by dimethyl dicarbonate (DMDC) in wine,

DECIDES, on the proposal of Commission II « Oenology », to modify the sheet 3.4.13 of the Code of Oenological Practices related to the treatment by dimethyl dicarbonate (DMDC) in wine, as follows:

3.4.13. Treatment with dimethyl dicarbonate (DMDC)

  • Add to Objectives:

c) Block fermentation of sweet, medium sweet, and medium dry wines

  • Replace  prescription a) by:

a) For objective a), the addition must be carried out a short time prior to bottling.
