MUSTS – TREATMENT WITH POTASSIUM CASEINATE

THE GENERAL ASSEMBLY

IN VIEW of Article 2 paragraph iv of the Agreement of 3 April 2001 establishing the International Organisation of Vine and Wine

GIVEN the opinion of the "Wine Technology" experts group

DECIDES on the proposal of Commission II "Oenology", to introduce in the International Code of Oenological Practices, the following practices and treatments:

Chapter 2: Musts

Treatment with potassium caseinate

Definition:

Addition of potassium caseinate to musts in the form of a colloidal suspension or in association with other fining agents.

Objective:

Eliminate oxidized polyphenolic compounds or those compounds likely to oxidize

Prescription:

Potassium caseinate must comply with prescriptions of the International Oenological Codex.

Recommendation of the OIV:

Admitted.
