GELATIN TREATMENT

THE GENERAL ASSEMBLY,

AFTER HEARING the works of the expert group « International code of oenological practices »,

DECIDES :

ON THE PROPOSAL of Commission II « Oenology », to include in the « International Code » , the following definition :

Chapter 2: Musts

Gelatin treatment

Definition:

Addition of gelatin to the must

Objectives:

  1. Reduction of  polyphenolic compounds in the must, in order to decrease must astringency before fermentation.
  2. Reduction of the particles which are insoluble in the must.

Prescription:

This gelatin must conform to the prescriptions of the International Oenological Codex;

Recommendation of the O.I.V.:

Accepted.
