RESOLUTION OENO 2/2001

PARTIAL DEHYDRATION OF WINE

THE GENERAL ASSEMBLY,

HAVING CONSIDERED the work of the expert group "International Code on Enological Practices,"

DECIDES based on the proposal by Commission II "Oenology" to include the following Enological practices and Prescriptions in part II of the aforementioned International Code:

PART II

Chapter 3: Wines

Partial dehydration of wines.

Definition:

Prescriptions to concentrate wine by elimination of water.

Objective:

Increase alcohol strength by volume of wine.

Prescriptions:

  1. The objective can be achieved by a variety of methods known as subtractive enrichment techniques.
  2. This prescription should not be used on wines showing any organoleptic defects;
  3. The elimination of water in wine cannot be done in conjunction with the possible elimination of water in the corresponding grape or must.
